Sweet-Savory Butter-Roasted Pecans

Buttery oven-roasted pecans seasoned with kosher salt, savory spices, and a touch of monk fruit sweetness for an irresistibly crisp, sweet-and-salty snack.

Prep
10 min
Bake
12–16 min
Serves
Yield: About 2 cups

Ingredients

  • 2 cups raw pecan halves
  • 2 tablespoons unsalted butter, melted
  • ½ teaspoon kosher salt
  • Monk fruit sweetener equivalent to 1 tablespoon sugar*
  • ½ teaspoon smoked paprika
  • ¼ teaspoon garlic powder
  • ⅛ teaspoon cayenne pepper, optional
  • ½ teaspoon finely chopped rosemary, optional

Method

  1. Preheat the oven to 325°F. Line a baking sheet with parchment paper.
  2. Combine the melted butter, salt, monk fruit sweetener, smoked paprika, garlic powder, and optional cayenne and rosemary.
  3. Add the pecans and toss until evenly coated.
  4. Spread them in a single layer on the prepared pan.
  5. Bake for 12–16 minutes, stirring halfway through. Remove them when toasted and fragrant; watch closely near the end.
  6. Let the pecans cool completely on the pan. They will become crisp as they cool.
  7. Store in an airtight container for up to two weeks.

*Monk fruit products vary considerably. Use the amount your package lists as equivalent to 1 tablespoon of sugar. For a more purely savory version, reduce that amount by half.
